  Cranberry Relish with Lime


This is delicious with turkey and also with l game, roast chicken, and roast pork. The relish has a spicy but sweet citrus flavor that goes well with rich food such as pates. It takes only a few minutes to make and will keep for weeks in the refrigerator.

1 small lime (about 3 ounces)
1 package (12 ounces) fresh cranberries
1 cup light maple syrup
1/4 teaspoon cayenne pepper
1/4 teaspoon ground ginger
1/4 teaspoon ground mace

Cut the lime lengthwise into quarters, then cut each quarter into thin triangular slices. Place them in a stainless steel saucepan and add the remaining ingredients. Stir well, cover, and bring to a boil over high heat. Mix thoroughly, cover again, reduce the heat, and boil gently over medium heat for about 5 minutes. A11 the cranberries should be broken and the mixture well combined. Transfer the relish to a bowl and allow it to cool. Refrigerate until serving time.

Packaged cranberries come clean, so they needn’t be washed before use.
