  Gratin of Mixed Fruit


When you have to create a dessert quickly, buy frozen unsweetened mixed fruit (peaches, grapes, apricots, and melon), available in 1-pound packages at most supermarkets. The fruit makes a wonderful gratin when baked, as it is here, with a few flavor-enhancing ingredients. Serve it lukewarm or at room temperature.

1 pound frozen unsweetened mixed fruit
1 cup frozen berries (blueberries, raspberries, or strawberries)
4 ounces butter cookies, crumbled
2 tablespoons lemon juice
1/3 cup sugar
1 cup heavy cream
1 pint vanilla ice cream (optional)


In a bowl combine the mixed fruit, berries, cookie crumbs, lemon juice, sugar, and cream. Stir well, and transfer to a 6-cup gratin dish. Place the dish on a foillined baking sheet, and bake in a 400-degree oven for about 35 minutes, until cooked throughout. Cool until lukewarm (40 minutes to 1 hour) or to room temperature, and serve as is or with ice cream.
